Full Time / Part Time
Hiroba Sushi is a modern Japanese diner in Henderson known for our black rice rolls, creative sushi, and strong ties to the local community. We are passionate about quality, consistency, and the craft of sushi.
We are currently seeking a skilled and motivated Sushi Chef who wants to grow, refine technique, and be part of a team that takes pride in its work.
This is an opportunity to work directly under Master Sushi Chef John Yonn and learn his techniques, knife skills, presentation standards, and our signature black rice program.

What You'll DoSushi Preparation & Execution
- Prepare nigiri, sashimi, rolls, and specialty items with precision and consistency
- Execute proper knife techniques and fish breakdown standards
- Maintain beautiful plating and presentation
- Follow recipes and portion control guidelines
- Uphold speed and accuracy during peak service
Black Rice Program
- Learn and execute Hiroba's signature black rice preparation
- Understand proper seasoning, texture control, and consistency standards
- Maintain quality across all black rice rolls and specialty items
Technique & Development
- Work under Master Sushi Chef John Yonn to refine:
– Knife skills
– Fish cutting techniques
– Rice handling and temperature control
– Roll construction and balance
– Clean, disciplined workstation management
- Continuously improve craftsmanship and speed
Food Safety & Professional Standards
- Follow strict food safety and sanitation practices
- Maintain a clean and organized sushi line
- Ensure proper storage, rotation, and handling of seafood
- Demonstrate professionalism at all times
Team & Community
- Work collaboratively with servers and kitchen staff
- Support a positive, high performance team culture
- Represent Hiroba Sushi with pride and professionalism
- Contribute to a welcoming experience for our community guests
What We're Looking For
- Previous sushi chef experience preferred
- Strong understanding of fish quality and handling
- Solid knife skills and roll technique
- Ability to work clean and efficiently in a fast paced environment
- Desire to learn and grow under experienced leadership
- Reliable, punctual, and team oriented
