- Handles food preparation for large all banquet events, that include breakfasts, lunches, dinners, and special events.
- After receiving each week's BEO, responsible for executing assigned production lists.
- Perform cooking, carving and/or other buffet duties as required.
- Stock and maintain designated food station(s).
- Operates food production equipment according to manufacturer's instructions.
- Carefully follows standard recipes for consistency, while preparing assigned items for banquet service.
- Assists in plating food items for service.
- Handles leftover food items as instructed by management.
- Make sure all food items are wrapped, dated, labeled, and stored properly.
- Keeps walk-ins clean and organized.
- Cleans assigned work area and kitchen.
- Performs other duties as assigned.
- Must have strong experience in a fine dining kitchen, ideally a catering kitchen.
- Proficiency in the following cooking techniques: charbroiling, poaching, deep frying, sauté, braising, roasting and par-cooking.
- Knowledge of herbs and spices and proper use of each.
- Ability to follow a recipe and provide consistency in the final product.
- Knife skills.
- Understanding of food safety practices and hygiene.
- Willing to work a flexible schedule including nights, weekends, and holidays.
- Must be detail oriented, extremely organized, and great at time management.
