    Brief Job Description:

    • Handles food preparation for large all banquet events, that include breakfasts, lunches, dinners, and special events.
    • After receiving each week's BEO, responsible for executing assigned production lists.
    • Perform cooking, carving and/or other buffet duties as required.
    • Stock and maintain designated food station(s).
    • Operates food production equipment according to manufacturer's instructions.
    • Carefully follows standard recipes for consistency, while preparing assigned items for banquet service.
    • Assists in plating food items for service.
    • Handles leftover food items as instructed by management.
    • Make sure all food items are wrapped, dated, labeled, and stored properly.
    • Keeps walk-ins clean and organized.
    • Cleans assigned work area and kitchen.
    • Performs other duties as assigned.

    Candidate Qualifications:

    • Must have strong experience in a fine dining kitchen, ideally a catering kitchen.
    • Proficiency in the following cooking techniques: charbroiling, poaching, deep frying, sauté, braising, roasting and par-cooking.
    • Knowledge of herbs and spices and proper use of each.
    • Ability to follow a recipe and provide consistency in the final product.
    • Knife skills.
    • Understanding of food safety practices and hygiene.
    • Willing to work a flexible schedule including nights, weekends, and holidays.
    • Must be detail oriented, extremely organized, and great at time management.
