    Position Summary

    The Sushi Chef is responsible for managing the daily operations of the Sushi area, implementing production process, managing food cost/labor cost and have overall understanding of HACCP. They motivate employees to continually improve performance, follow/direct HACCP/Food Safety/Physical Safety Programs, and manage cost controls.

    Job Duties and Responsibilities

    • Plans and creates menus and corresponding menu prices
    • Develops and tests recipes and techniques for food preparation and presentation to ensure consistent high quality and to minimize food costs
    • Conducts regular physical inventories of food supplies, and assess projected needs; orders all necessary food and supplies
    • Hires, trains, and mentors staff to ensure continuous growth through training, developing, direction, assessing performance, and providing feedback
    • Safeguards all food preparation employees by implementing training to increase their knowledge about safety, sanitation, and accident prevention principles
    Position Requirements
    • High School Diploma or GED
    • Culinary Arts Degree or equivalent experience
    • Excellent Customer Service skills
    • 2 to 3 years of Sushi preparation experience
    • CPR/AED certification within first 30 days of hire
    • Ability to frequently lift and/or move up to 10 pounds and occasionally lift and/or move up to 50 pounds.
    • Ability to work with knives and other kitchen tools
