    Great American Restaurants is seeking a Pastry Chef for our Best Buns concept. Best Buns features hand-crafted artisanal baked goods, fresh sandwiches and salads, renowned made-to-order breakfast sandwiches, and the best hospitality in the business. Our production team is fast-paced, detail-oriented and high energy. As our Pastry Chef, you are responsible for leading, developing and coaching a team of 18-20 production employees. You will also be responsible for creating weekly schedules, managing food and labor costs, inventory and ordering, and working hands-on with the team to consistently produce our artisan breads, rolls, laminates, cakes, and cookies. The position reports to the General Manager, and is a tremendous opportunity for a bread master well experienced with artisan breads and managing teams to lead a successful, high volume bakery.

    Desired Skills and Experience:

    • Well experienced baking artisan bread and leading teams in a management or supervisory role
    • Experience should include: high proficiency in artisan breads, rolls, laminates, cakes and pastries.
    • Expert knowledge of all steps of baking process including (but not limited to) recipe development, scaling and mixing, dividing and shaping, proofing and baking.
    • Punctual and reliable, and able to work early mornings (4am start time), weekends and holidays.
    • Must have the physical ability to carry out functions described above, which include but are not limited to: standing most of the workday, lifting >50lbs., operating commercial ovens, sheeter, mixer.
    • Ability to lead a team
    • Pastry or Baking degree preferred
