Fabio Viviani grew up poor on the west side of Florence. Often, the only entertainment his family could afford was a visit to Giostra – a magical old carousel in Piazza della Repubblica. This town square was a gathering place for people from all walks of life, where everyone felt welcome.

In that spirit, Fabio Viviani Hospitality is pleased to bring South Barrington Giostra – an old-school Italian restaurant featuring the simple, classic dishes Fabio grew up on. With recipes passed down from his mother and grandmother.

About the Role

We're looking for a dependable and skilled Grill Cook to join our kitchen team at Giostra. This role is for someone who loves creating great food and thrives in a fast-paced, high-energy environment. You'll be the one ensuring every grilled dish that leaves the kitchen is perfectly cooked, beautifully presented, and full of flavor.

Duties and Responsibilities

• Prepare and set up your grill station each day with all necessary tools, ingredients, and equipment.
• Grill meats, poultry, seafood, and vegetables to order — always cooked perfectly and plated beautifully.
• Season, marinate, and finish dishes according to Giostra's recipes and standards.
• Monitor grill temperatures and make adjustments as needed to ensure consistent cooking and food safety.
• Maintain a clean, organized, and sanitary workstation throughout your shift.
• Assist with daily prep, menu specials, and event service when needed.
• Work closely with other kitchen staff to ensure smooth, efficient service and timely ticket execution.
• Handle ingredients safely and follow all food safety and sanitation procedures to prevent cross-contamination.
• Check and track inventory for your station; communicate shortages or equipment issues promptly.
• Help with closing duties, including cleaning equipment, restocking, and proper food storage.
• Bring a positive attitude, a willingness to learn, and a genuine team spirit to every shift.
• Take pride in every dish you serve — you're a key part of the guest experience at Giostra.
• Other duties as assigned

What We're Looking For

• Previous cooking or grill experience preferred, but we're open to training the right person with passion and drive.
• Strong understanding of basic grilling techniques and kitchen safety.
• Ability to multitask, stay calm under pressure, and work efficiently during busy shifts.
• Great communication and teamwork skills.
• Reliable, punctual, and proud of the work you put out.
• Must be able to lift up to 50 lbs and stand for extended periods.
• Open availability — including evenings, weekends, and holidays.
• Food Handler's Certification required (or must be obtained after hire).
