    Position Information

    The Animal Science Department is searching for a postdoctoral fellow who will support the design and execution of meat science research projects

    Overall responsibilities:
  • Develop, coordinate, and execute research plans that support the meat science research program objectives
  • Design and execute tasks to support research objectives including laboratory analyses, animal experimentation, data analysis, manuscript preparation, etc.
  • Assist with development and implementation of Peltier Complex operations related to muscle food research, product development, and marketing
  • Assist with graduate student, undergraduate student, and technical staff training

    Required Experience and Skills:
  • PhD in Animal Science or related field with experience in meat science/muscle biology
  • Experience with live animal care and handling
  • Experience with meat species carcass grading and fabrication
  • Ability to collaborate and effectively work with others
  • Experience with statistical analyses and scientific writing
  • Experience and ability to coordinate research activities and train personnel in meat animal carcass and muscle foods grading and valuation techniques
    Preferred Experience and Skills:
  • Experience supervising and leading of tissue data collection teams
  • Experience with sensory panel coordination, data collection, and analysis and/or;
  • Experience with value added meat processing techniques and/or;
  • Experience with benchtop laboratory techniques and optimization for meat quality measurements
  • Desire and ability to assist with teaching and other departmental activities
  • Desire and ability to apply for grant funding to support research activities
