**Description**

**ESSENTIAL DUTIES AND RESPONSIBILITIES**

Consult with chef to establish necessary prep for daily dining activities.

Evaluate food products to assure quality standards are attained and to minimize food and supply waste.

Prepare menu items according to specification or recipe while maintaining food safety and HACCP standards.

Daily replenishment of all food items necessary to the culinary operation for daily meal prep.

Organize prepared items relevant to the menu in a manner to make them ready for the shift service.

Engages in a la carte menu service utilizing portion control and presentation standards to provide the highest quality food service as expected.

Proper cleaning and sanitation of all areas in kitchen before, during and after menu service.

Receive, organize and store of provisions into kitchen areas using a practice of the FIFO method.

Involved with inventory controls including physical counting, orderliness, and reconciliation.

Maintain a safe, clean and organized work environment

Keep up-to-date on company policies and procedures

Perform other duties deemed necessary by management

Set-up for events, serve guests, clean-up after events and report any needed repairs.

Provide supervision and training, as required, for Hotel Private Dining Staff.

Provide backup in the absence of the Private Dining Manager with meal planning, order, purchase and maintain inventory for kitchen supplies, food, equipment, etc. May pick up and deliver supplies from local stores, restaurants and hotels.

On call for after-hours and private events.

Perform any other related duties as required or assigned.

**EDUCATION AND EXPERIENCE**

High school or GED, plus specialized schooling and/or on the job education in a specific skill area; e.g. data processing, clerical/administrative, equipment operation, etc, plus 2 years related experience and/or training, and 2 years related management experience, or equivalent combination of education and experience.
