    Owners, Chef de Cuisine, Managers

    Position Summary
    The Sous Chef is responsible for supporting the Chef de Cuisine in the execution of all culinary business operations
    and management of all back of house staff, including hire, onboarding, and training. The Sous Chef is also
    responsible for all back of house administrative processes in the absence of the Chef de Cuisine.

    • Demonstrate all core values of Barboncino.
    • Assist in managing staff properly and efficiently to professionally represent the Barboncino brand.
    • Assist in the hiring process for all culinary positions throughout the company with assistance from the Chef
    de Cuisine; participate in the interview process of all hourly team members.


    • Care for the team and its operating environment communicate any HR concerns with management team.
    • Assist in the writing and execution of business policies, SOP's, kitchen related job descriptions, quizzes, and
    disciplinary initiatives.


    • Serve as an ambassador for kitchen when Chef de Cuisine is not present
    • Check in with cooks and their prep lists make sure tasks and projects are being completed within reason
    of the pars set forth on the prep lists.


    • Manage the master prep list, closing list, and additional prep lists.
    • Directly responsible for all culinary administration duties including cost control, payroll/labor control, menu
    development, and scheduling with the CDC.


    • Assist in maximization of company profitability with a target margin of 20%; monitor financial controls
    established by the CDC.


    • Ensure that operational and training standards are consistently followed and executed.
    • Lead the behavior that creates a safe and enriching workplace for all employees.
    • Provide feedback and corrective action in order to hold hourly team members accountable to company
    values, goals, and standards.


    • Ensure new company initiatives are supported and communicated clearly to all team members.
    • Lead and foster a restaurant culture that promotes employee development and coaching on a daily basis.
    Service and Standards


    • Maintain sanitation standards and procedures that comply with health and legal regulations in the
    accordance with the owners and the Department of Health


    • Interface with FOH specifically utilizing the manager on duty as the point person for communication and
    troubleshooting mistakes and problems before and during


    • Communicate all facility maintenance and improvements needs to the management team.
    • Assist in training all new hires on the expectations of the kitchen, recipes, quality and presentation required
    for each dish


    • Conduct line checks multiple times per day when on duty to ensure DOH compliance; addresses all DOH
    violations immediately


    • Demonstrate the ability to provide support on all BOH responsibilities to provide support at any time
    needed


    • Carry out daily responsibilities outlined in this job description within a reasonable amount of time and
    pitching in to prepare for the next day/later in the week

    • Communicates information effectively and efficiently.
    • Ability to utilize traditional software programs such as Gmail, Microsoft Office (Word, Excel, Outlook, and
    PowerPoint), and any additional systems as needed; ability to access and accurately input information using
    a moderately complex computer system.


    • Must have considerable skills in math and algebraic equations using percentages.
    • Participate in community events and ensure corporate social responsibility goals of Company are met.
    • Ensure that all staff are compliant with Company's policies and procedures, as well as city, state, and
    federal laws.


    • Attend mandatory meetings including staff meetings, leadership meetings, etc.
    • Maintains knowledge by attending educational workshops, reviewing professional publications,
    establishing personal networks, benchmarking state-of-the-art practices, and participating in professional
    societies.


    • Complete other duties as assigned by Owners.
    Physical Demands
    The physical demands for this position are seeing, hearing, speaking, reaching, lifting up to 50 pounds, sitting,
    standing, for 5 to 10 hours, bending, and moving intermittently during working hours. These physical requirements
    may be accomplished with or without reasonable accommodations.

    Work Experience


    • Minimum 2+ years' experience in a similar position in a full-service, similar caliber restaurant.
    Educational Requirements


    • Culinary Arts Degree, preferred.
    • Holds NY Department of Health and Mental Hygiene Food Protection Certificate.
