We seek an experienced Beverage Manager to lead our cocktail program and team. This is an amazing opportunity to incorporate your knowledge and creativity with spirits distilled and blended on site. Summary
The Beverage Manager is responsible for creating, continuously improving and integrating all components of our beverage program (e.g. on site, events, to-go, and ready-to-drink, packaged cocktail specialty offerings) helping to define the Iron Fish Distillery experience at or away from the farm. This includes overseeing the profitable creation of noteworthy cocktail offerings that can be prepared and delivered efficiently, effectively - scalable to the context.
This position collaborates closely with and reports to:
● Director of Food, Beverage, and Retail Operations for all implementation efforts supporting the onsite guest experience.
●Director of Food, Beverage, and Retail Operations involving collaborative efforts in R&D, recipe development, local grower sourcing, shelf and tasting studies, and offsite event scaling and production.
The intention is to create a team of leaders, coordinating through collaboration, prioritization, and clear communication.
Responsibilities include:
● Develop, test, refine, cost and price offerings, and implement all beverage menus for Iron Fish tasting rooms as well as on and off-site special event menus. Work internally to coordinate changes to the menu for print and social media updates.
● Supervise and guide Tasting Room Beverage Program preparation. Train all employees assigned to prep, help define the labor requirements to meet demand with the goal of spending not more than 30% of total time each week in actual prep production. Be involved in recruitment of prep staff for cocktails.
● Work collaboratively with internal team members (e.g. Director of Retail Operations, Food and Beverage Innovation Manager and bartenders and others) to seek input, present ideas, test concepts and reach consensus on the development of recipes.
● Step in bartend/host on a weekly tasting room shift as required.
● Development of processes and, written SOP's documentation as well as video training, integrated into front of house team training. Build and maintain a seasonal library of craft cocktail recipes, carefully document recipe, costs and cocktail build requirements for our retail operations.
● Create and maintain written SOP documentation for batch, keg and kegging procedures on core Iron Fish cocktails for larger scale on and offsite events. Manage formulas and recipes for keg style proportions.
- Maintain high quality cocktails, managing high expectations across the bar and prep team.
● Train staff on cocktails profiles, including category knowledge and what to highlight in customer interactions.
● Communication of new offerings, cocktail directions for the day/week and for Events to the front of house team.
● Consider how cocktails complement food offerings to elevate the guest experience.
● Embrace inspiration from locally sourced and seasonally grown ingredients, find creative ways to showcase specialty food partners in trial recipes that lead to menu and product offerings. Lead procurement of local products for cocktails and share discoveries with our food team. Take on relationships and find convenient cost- effective farm/CSA options.
● Leverage knowledge and experience from our on-premise cocktail program to support product development for cocktails-to-go, ready-to-drink and related packaging solutions.
● Stay abreast of cocktail trends and competitor offerings and pricing models.
● Recommend and oversee capacity building/planning for cocktails to meet peak season demand and large events.
- Maintain cleanliness of all bar areas and service spaces.
- Check bar equipment regularly for repairs and maintenance.
Carry out Manager On Duty (MOD) job requirements as needed
- Counting drawers
- Holding FOH/BOH staff accountable for beginning and end of shift duties
- Supporting FOH/BOH staff during peak tasting room hours
- Lock and alarm all buildings
- Curate and manage End Destination Beverage Experiences
- End Destination Sales Account Management
- Implementing and coordinating educational opportunities for guests
- Supervise and Guide Event Bartending Program
- Hire/train/coach staff
- Fill in as needed
- Communicate with clients to create an event drink menu
Wholesale Distribution Responsibilities include:
o Work with the Director of Food, Beverage, and Retail Operations in creative adoption of Iron Fish spirits by targeted on premise wholesale accounts.
o Build and maintain a customer focused subset seasonal library of craft cocktail recipes, carefully document recipes, costs and cocktail build requirements for use by on premise accounts and work with the Marketing team to coordinate account access on our website or social media.
o Build external relationships with off-site craft cocktail bartenders and participate in trade gatherings and contests that establish Iron Fish brand excellence and standing among peers.
o By responding to off-site account requests for cocktail concepts showcasing Iron Fish spirits and ancillary products (e.g. bitters, maple syrup, honey).
Desired Qualifications/Requirements:
● 2 + years working at a premium cocktail bar.
● Broad knowledge and love of spirits, cocktails, bitters and modifiers.
● Demonstrated experience with training bartenders, servers and those preparing cocktail ingredients.
● Familiarity with northwest Michigan and its tourist/hospitality attractions (outdoor recreational options, restaurants, hotels, wineries, points of interest, etc.) is helpful.
