- Enforce performance standards, policies and procedures in the venue are in accordance with Grand Casino's mission and objectives.
- Responsible for complying with all food and beverage health, liquor and safety regulations; as well as all Tribal, Federal, State and Local applicable laws.
- Responsible for evaluating and training of the Associates ensuring staff's compliance with all guest service standards and maintaining adequate staff to service Guests.
- Responsible for liquor control, ordering and tracking for the venue.
- Ensure venue operations are run in a smooth, efficient manner to ensure guests satisfaction.
- Review and approve all recommendations and suggestions to hire, transfer, suspend, promote, discharge, evaluate, assign and discipline all Associates in a fair and equitable manner.
- Maximize cost effectiveness within the department by ensuring compliance with established budget, labor and revenue benchmarks.
- Responsible for listening to, evaluating and assuring control of guest grievances and settles them without delay.
- Responsible for the job performance of all Associates and provides feedback on it to aid the Associates in developing and enhancing skills.
- Provide input to Operations Leader concerning operational deficiencies and areas in need of attention.
- Review financial statements; forecast revenue and labor figures for beverage department; maintain proper inventory control.
- Establish priorities for all supervisors and provides assistance as needed.
- Ensure accurate monthly inventories.
- Participate in the development of new menu items, daily special, and promotions, taking under consideration Venue budgets, food cost perceived and guest satisfaction.
- Knowledge of Grand Casino's internal controls, policies and procedures.
- Responsible for maintaining all kitchen equipment and the appearance of the venues in accordance with Grand Casino's standards.
- Responsible for maintaining open communication throughout the venues, through monthly staff meetings, weekly supervisory meeting, and daily pre-shift meetings.
- Any and all other duties as assigned.
EDUCATION and/or EXPERIENCE: - Six (6) years progressive Food & Beverage Operations experience with five (5) years of Supervisory/Managerial experience required and/or an equivalent combination of education and experience, preferably in the hospitality industry with emphasis on Food & Beverage.
- Two (2) years alcohol service including wine service experience with one (1) year of Supervisory experience in a venue that serves alcohol required.
- Serv-Safe Certification preferred (Certification is required within one (1) year of placement).
- Alcohol Awareness (Certification is required within 2 months of employment)
