    LOGIN Per Diem Cook Medford Multicare Center DESCRIPTION JOB SUMMARY:

    Prepares, seasons and cooks food for patients, employees and visitors according to standardized recipes. The cook or cooks are under the direct supervision of the Food and Nutrition Service Director for the proper and efficient operation of the kitchen and meal production according to established policies.

    QUALIFICATION

    High School diploma or equivalent; certification in food services is a plus but not a requirement.

    ESSENTIAL FUNCTIONS

    Prepares, seasons and cooks food for patients, employees and visitors according to standardized recipes.

    Reviews menus and work orders to determine type and quantities of meats, vegetables, soups, salads and desserts to be prepared. Plans cooking schedule so that foods will be ready at specified times. Confers with Registered Dietitian regarding modified diet preparation and use of leftovers. Procures foodstuffs from refrigerator, freezer, or other storage areas or requests other workers to perform this task. Trims and cuts meat, fish, and fowl, using knives.

    Prepares or supervise washing, trimming, cooking and seasoning of food items. Measures and mixes ingredients according to recipes, using a variety of kitchen utensils and equipment such as blenders, mixers, grinders, slicers, and tenderizers, to make sauces, soups, stews, casseroles, and desserts. Bakes, roasts, broils and steams meats, fish, vegetables, and other foods. Observes and tastes food being cooked and adds ingredients or seasoning to improve flavor and texture. Also prepares cold meats. Sandwiches, griddle cakes, cooked cereals, and beverages.

    Responsible for proper use and care of equipment, its sanitation, and reporting to Food Service Supervisor of any repairs required.

    Prepares or directs distribution of food to serving units according to standardized recipes, menu combinations or orders for residents and production sheets.

    Inspects food and meats in storage and directs sanitary maintenance of storage rooms and units, stoves, work tables, and equipment.
