Job Summary
The Lead Cook prepares meals according to approved menus and recipes taking into account the special dietary needs of residents living in the community.Responsibilities
- Prepare and present menu items according to standard recipes
- Assist DSD with training and supervision of dietary staff
- Maintain a clean and orderly work area at all times including floors Participate in weekly cleaning routines planned by Dining Services Director Report faulty equipment broken or chipped tableware and food trays to supervisor and removes these items from meal service Report incorrect refrigerator and freezer temperatures to supervisor immediately Ensure all leftover food is properly cooled stored identified and dated Observe good safety practices Monitor and control portion sizes to minimize food waste Remove frozen food items from freezer for next day or meal preparation begin preparation for next day meal Make appropriate menu substitutions when certain food items are not available This is done only with approval of Dining Services Director Responsible for supervising all assigned duties to ensure kitchen is ready to provide meal service When working evening shift responsible for ensuring kitchen area is clean ready for next day operation Take record food temperatures three daily Attend required in-service staff meetings Will become familiar with specific requests diets each resident Must be alert changes residents dietary needs as well as likes dislikes Must be courteous polite all residents visitors staff Follow confidentiality policies regarding release of resident information Supervises dietary staff absence Dining Services Director assists training new employees Conduct inservices training direction Dining Services Director Attends required inservices staff meetings Requirements: Must have High School Diploma GED Must have experience cook preferably senior living fine dining Leadership experience ServSafe certified willing complete certification within days hire basic understanding food service operations familiarity other dietary position duties Possess ability read write simple calculations Able learn quickly apply principles learned Able follow oral written directions Experienced preparing cooking estimating quantities required Knowledgeable sanitation safety handling equipment Ability stand periods withstand temperature extremes wet humid conditions noise Ability lift lbs regular basis eight times per shift Carry heavy objects feet Pull push grasp reach adequately perform necessary activities Organized well people team Designated uniform slip resistant footwear during hours maintain good personal hygiene Willing work flexible schedule includes evenings weekends holidays
