    Description

    Hinoki & the Bird in Los Angeles is looking for a lead baker to join our team

    We are looking for someone with at least 2 years in a bakery management/lead role. You should have at least 3 years experience baking professionally, including but not limited to: sourdough bread fermentation, bread shaping, cookies, donuts, etc.

    Baking is physical, you must be able to easily lift 50 LB and be able to stand for extended periods of time on your feet.

    Responsibilities

    • Weigh and measure ingredients accurately, knowledge of metric system (grams and kilos)
    • Proofing and baking of pastries
    • Mixing, Shaping + Baking of artisan sourdough bread
    • Knowledge of and experience dough handling
    • Experience monitoring dough fermentation and proofing temperatures
    • Inventory control, quality control
    • Proper cleaning and sanitation standards
    • Creative input

    Qualifications

    • Attention to detail in all aspects of baking, eye for quality control
    • Dedicated to working as a team towards one goal
    • Conflict resolution, experience providing and receiving regular feedback
    • 3 + year professional cooking or baking experience or culinary school equivalent
    • Must be able to receive regular constructive feedback and adjust to the needs of the bakery and team
    • Must be able to lift 50+ lbs and stand for up to 8 hours during a shift
    • Servsafe required after employment
    Candidates must be comfortable with full time schedule starting dark and early in the mornings (6am-8am start) and must understand that this is a physically demanding job.
