Job DescriptionThe Harbor Club is seeking a full time Executive Chef that will oversee all ala carte and banquet execution. This is a hands-on position that is responsible for the day-to-day operations, overseeing all functions of the department including, hiring, menu planning, ordering, inventory, private events and ala carte. Additional responsibilities include but are not limited to:
• Manages all operating expenses, sets margins, and manages against projections.
• Creates innovative menus established with current food costs and member/guest satisfaction in mind.
• Controls ordering, inventory levels, timing of orders, receiving, and invoice settling.
• Works with Building Maintenance to maintain kitchen equipment.
• Ensures quality sanitation program is followed throughout the kitchen operation.
• Ensures proper monitoring of storage (including temperature setting) and rotation of food products to comply with Health Department regulations.
• Manages department employees including chefs, cooks and stewards and is responsible for training, planning, assigning, and directing work, evaluating performance, rewarding & disciplining employees; addressing complaints and resolving problems.
• Monitors business volume forecast and plans accordingly in areas of staffing, productivity, costs and other expenses.
• Responsible for implementing and maintaining excellent service to assure guests dining satisfaction.
• Incorporates safe work practices in job performance.
Has 5+ years of luxury culinary experience as an Executive Chef or an Executive Sous Chef; club experience a plus.
• Preferably, has a culinary or related degree.
• Is a dynamic, creative, empathetic, and caring individual who communicates well with staff and Members.
• Has exceptional cooking skills, with the ability to train, mentor and manage the culinary team
• Has experience planning and monitoring all food-production-related costs.
• Successful experience developing food purchase specifications and standard recipes.
• Has a proven track record of maintaining food quality and sanitation standards.
• Is experienced with technology including POS systems such as Microsoft Excel, Word, Outlook, Cloud Based Office Systems & Documents, Digital Ordering, etc.
• Food Safety Certified.
• Regular & reliable attendance.
The club serves breakfast and lunch Monday through Friday, dinner Tuesday through Friday, and Sunday brunch.
The club has multiple private rooms, shared co-working space and a ballroom that can seat 300.
Company Description
The Harbor Club is in downtown Charleston, South Carolina. The club has enjoyed a 36-year history in Charleston and has recently relocated to a brand-new club on the 7th floor of 22 West Edge in the new West Edge mixed use development. The club has 1100 Members and provides a social and business environment. \rThe club serves breakfast and lunch Monday through Friday, dinner Tuesday through Friday, and Sunday brunch.\r
The club has multiple private rooms, shared co-working space and a ballroom that can seat 300.
