SUMMARY:

Game day – running multiple components. The restaurant - (flagship restaurant or pavilion which is all you can eat buffet)

On Non game days – running the catering events

KEY RESPONSIBILITIES/QUALIFICATIONS:

• They will need to be responsible for Menu engineering

• Understanding regional cuisine,

• understanding seasonality, ability to run high end kitchen

• Oversee a culinary staff of 8

Profile:

• Fine dining

• Managing hourly staff

• Union experience preferred

• Industry: sports, casino
