    **Pantry Cook**

    Dallas, OR **Position: Pantry Cook**

    **Department: IL KITCHEN**

    **Reports To: Campus Chef**

    **FLSA Status: Non-Exempt**

    **SUMMARY:** The Pantry Cook purpose is to perform a variety of food preparation and dining related tasks, resulting in a quality meal time for DRV residents and employees. These tasks include food preparation, merchandising of products, utilizing a combination of scratch prepared items, mixes, and par baked products. Maintaining supplies in designated quantities, and providing direct meal services to residents and employees. Performing these duties in accordance with established food service policies and procedures. Other duties include kitchen cleaning, dishwashing, and general upkeep of facilities.

    Serve meals in accordance with established menus, quality standards, pricing

    Prepares food in accordance with HACCP as well as facility established policies and procedures to ensure food safety.

    Performs basic food preparation under the direction of the Campus Chef. Prepare a variety of foods, such as meats, vegetables, desserts according to customers orders or supervisors instructions, following approved procedures. Prepares salad bar foods, and prepares and packages take out foods.

    Uses the electric slicer, knives, and other tools such as large mixer in performing prep duties as necessary in accordance with sanitary regulations as well as established policies and procedures.

    Follows safety regulations at all times and follows established infection control and Universal precautions, policies and procedures.

    Uses correct portion control to ensure costs are managed and contained.

    Assist in maintaining food storage areas, food preparation areas and other kitchen areas in a clean and properly arranged manner.

    Disposes of food and waste in accordance with established policies.

    Performs routine and scheduled dishwashing and cleaning procedures. Assures that utensils and other cooking instruments are readily available for the next meal.

    Cleans and maintains the essential cooking surfaces and equipment used in Pantry cook/Baker positions.

    Assists in inventorying and storing incoming food as needed.

    Performs other foodservice activities or dining service activities as assigned.

    Maintains acceptable standards of personal hygiene and complies with department dress code.

    Attends in-service training and education sessions as assigned.

    Follow safety regulations at all times. Follows infection control and universal procedures when performing daily tasks. This includes wearing personal protective equipment when appropriate.

    Provides documentation of food and equipment temperatures and performs corrective actions as needed.

    Works under the directions of the Chef Manager to establish weekly baking/cooking schedules to ensure they are correctly prepared to meet the standards set forth in recipes.

    Prepares Menu and baked items to order utilizing major food equipment. Ensures that the meals and baked goods are correctly prepared and served and meet the standards set forth in the instructions or procedures for each menu item ordered, and in a timely manner.

    Prepares and serves food in accordance with established policies and procedures to ensure food safety.

    **QUALIFICATIONS:**

    The requirements listed below are representative of the knowledge, skill and/or ability required to perform the job. Educational and Experience Requirements

    Prior cooking experience in a restaurant or similar venue is preferred

    Ability to understand and follow instructions in English, communicates effectively, and performs simple arithmetic. Ability to understand measurements and conversions. Knowledge of basic kitchen equipment operations.

    Must be able to obtain a Food Handlers card within 1 month of hire

    Must be at least 18 years old per the Bureau of Labor & Industry for operating the foodservice equipment required by this position.

    Ability to plan and organize work, to interpret instructions, recipes, specifications and standards.

    Knowledge of basic kitchen equipment operations.

    Ability to communicate with, understand, empathize with, work with and be tolerant of residents, families, visitors, peers, supervisors, and subordinates.

    May be required to lift, push, pull and move equipment, supplies, etc. in excess of 50 pounds with a team member or by self throughout the day.

    Must maintain the care and use of supplies, equipment, and appearance of work areas for regular inspection of food services for sanitation, safety, and proper performance of assigned duties.

    **WORKING CONDITIONS**

    Subject to exposure to infectious waste and disease (HBV and HIV).

    Will be exposed to heat in kitchen work areas and cold temperatures in food storage/freezer areas.

    Stands, bends, lifts and moves throughout workday.

    May be required to lift, push, pull, and move equipment, supplies, etc, up to fifty pounds throughout the workday.

    May be required to work after regular work hours, or holidays or weekends.

    May be required to work on shifts other than the shift initially hired for.

    Exposed to slippery floors.

    Exposed to odors.

    Exposed to sharp blades and objects throughout the day.
