- Product Quality: Produces high-quality products in a consistent manner.
- Formulation: Ensures proper volumes of each raw material are entered into the kettles/processors.
- pH Balance: Ensures proper pH is achieved in all kettles/processors.
- Moisture Control: Appropriately monitors and controls drain speeds to ensure proper moistures have been reached.
- Sampling and Documentation: Ensures proper sampling of raw material, preblend, and whey; maintains all proper documentation, including recording charts and cheese-making log sheets.
- Cleaning and Sanitation: Cleans and sanitizes equipment and lines, ensuring homogenizers are at proper pressures.
- Work Area Maintenance: Maintains a clean and sanitary work area.
- Confidentiality: Upholds all rules pertaining to confidentiality of information regarding Sorrento products and recipes.
- Promotes Good Manufacturing Practices (GMP) and Good Sanitation Practices (GSP).
