    The Executive Sous Chef plays a vital role in the success of our culinary operation, assisting the Executive Chef in maintaining high standards of cleanliness, food quality, labor, and food costs across all food outlets.

    Key Responsibilities:

    • Menu Development:
      • Sourcing, pricing, and establishing relationships with vendors.
      • Recipe building and costing.
      • Presenting seasonal menu changes and holiday menus with the Area Executive Chef.
    • Food Cost and Budgeting:
      • Increasing food quality and consistency while reducing costs.
      • Managing recipes, ingredients, and processes to ensure quality control and allergy awareness.
      • Analyzing sales data.
      • Reducing waste and optimizing inventory management.
    • Team Management:
      • Training kitchen staff on food preparation, safety protocols, equipment operation, and sanitation standards.
      • Hiring in conjunction with HR and the Area Executive Chef.
      • Supervising staff and monitoring efficiency, productivity, and workflow.
      • Scheduling and adjusting staffing levels according to seasonal trends and revenue.
    • Education and Training:
      • Developing training tools and materials for program implementation.
      • Creating menu descriptions, allergy charts, recipe books, and prep lists.
      • Conducting staff tastings and pre-shift education sessions.
    • Health and Safety:
      • Ensuring compliance with federal, state, and local health and sanitation regulations.
      • Maintaining cleaning and maintenance schedules for equipment, storage, and work areas.
      • Providing staff training and education on food safety practices.
    • Repair and Maintenance:
      • Ensuring the kitchen and equipment are in working order.
