Job Title: Head Chef / Kitchen Manager
Location: Century City Mall, Los Angeles, CA
Type: Full-Time
we are looking for a visionary and disciplined Head Chef to lead our culinary team at our flagship Century City location. We specialize in authentic Sichuan cuisine and the world-renowned Dongpo heritage. We need a leader who can maintain the soul of our traditional flavors while managing a modern, high-volume kitchen with precision and professionalism.
Key Responsibilities * Culinary Excellence: Oversee the preparation and execution of authentic Sichuan dishes, ensuring every plate meets our brand's global standards for flavor and presentation.
Regulatory Leadership: Ensure 100% compliance with California Health & Safety regulations. Maintain a "Grade A" kitchen environment at all times.
Team Management: Train, mentor, and supervise kitchen staff. Maintain a professional, efficient, and respectful kitchen culture.
Operational Oversight: Manage inventory, food waste, and labor costs. Execute the FIFO (First In, First Out) method and strict labeling protocols.
Inventory & Stocking: Oversee ordering and quality control of authentic ingredients to ensure consistent supply.
Requirements (Non-Negotiable) * Language: Native or professional fluency in Mandarin Chinese and English. You must be able to communicate effectively with our corporate team and our diverse kitchen staff.
Cuisine Expertise: Deep knowledge of authentic Chinese/Sichuan culinary techniques, ingredients, and traditions.
Compliance: Comprehensive knowledge of local health laws and food safety protocols.
Certifications: Must possess a valid ServSafe Manager Certification (or equivalent California-recognized certification).
Experience: Minimum of 5 years in a high-volume, upscale restaurant kitchen, with at least 2 years in a leadership/management role.
