- Assist in developing and implementing new recipes and menus.
- Assist the Executive Chef, Chef De Cuisine, and Department Heads concerning menu development.
- Interface with Kitchen staff regarding food quality, preparation, and presentation.
- Ensure high and consistent quality of all menu items both in preparation and presentation: ensure that all recipes are followed exactly; check the taste and texture of all dishes before meal service; ensure that all presentations are to the specifications for each dish.
- Assist with inventories, ordering, receiving, and cross training as needed.
- Oversee the operations of all kitchen outlets. Manage food logs.
- Assist culinary team as needed, know how to work each station in the kitchen.
- Expedite line as required.
- Assist with covering any stations or duties in the absence of a team member.
- Participate in demonstrations, special projects and public relations duties as necessary.
- Adhere to Carillon Miami Beach standards for guest service.
- Give appropriate support or guidance to members of kitchen when need arises.
- Ensure all complaints, inquiries, suggestions by guests are attended to accordingly.
- Follow Carillon Miami Beach Sanitary Guidelines in order to maintain the highest possible rating from the Health Department on a regular basis.
- Follows corporate HACCP program as required. Responsible for HACCP related food temperature checks.
- Report, correct and document any observed or known safety hazards, conditions or unsafe practices and procedures. Report these infractions to management immediately and create a Hotsos as required.
- Communicate with the Engineering department as needed regarding smooth operation of equipment.
- Manage guest problems or complaints to according to Carillon Miami Beach guest problem resolution policy. Enlist the assistant of top management if required for a resolution.
- Perform other job-related duties as directed.
- Two or more years of experience as a Lead Chef, or kitchen management in the local market within a luxury hospitality setting preferred.
- Clear understanding of food costs and labor costs, able to assist in controlling costs as required.
- Ability to effectively handle multiple tasks simultaneously with frequent interruptions.
- Ability to handle stressful situations and be able to prevent and/or handle emergency situations.
- Ability to multitask: The junior sous chef in the position must be able to handle many tasks all at once.
- Ability to pay attention to detail: adherence to specific ingredients and measurement needed for various menus.
- Ability to develop and maintain good working relationships with all levels of Carillon Miami Beach staff, vendors, guests and government agencies.
- Good guest service skills.
- Good verbal and written communication skills in the English language.
- Strong organizational skills and attention to detail.
- Food sanitation certificate required
- Some working knowledge in Microsoft Word, Excel and Outlook.
- Strong analytical and problem-solving abilities.
- Good judgment and the ability to maintain confidentiality are critical.
- Availability to work any day, outlets, and/or schedule.
