    Job Description

    This job description serves as a guide for establishing the criteria to fill a specific job, and to assist in staff member evaluation related to that job. The description is subject to change at management's discretion, and may include additional or different duties as assigned or directed.

    Job Summary

    Responsible for assisting in overseeing and directing all aspects of the operation of the kitchen, and in providing functional assistance; coordinating activities and functions with other heads in the food and beverage department.

    Essential Job Functions

    1. Assist in developing and implementing new recipes and menus.
    2. Assist the Executive Chef, Chef De Cuisine, and Department Heads concerning menu development.
    3. Interface with Kitchen staff regarding food quality, preparation, and presentation.
    4. Ensure high and consistent quality of all menu items both in preparation and presentation: ensure that all recipes are followed exactly; check the taste and texture of all dishes before meal service; ensure that all presentations are to the specifications for each dish.
    5. Assist with inventories, ordering, receiving, and cross training as needed.
    6. Oversee the operations of all kitchen outlets. Manage food logs.
    7. Assist culinary team as needed, know how to work each station in the kitchen.
    8. Expedite line as required.
    9. Assist with covering any stations or duties in the absence of a team member.
    10. Participate in demonstrations, special projects and public relations duties as necessary.
    11. Adhere to Carillon Miami Beach standards for guest service.
    12. Give appropriate support or guidance to members of kitchen when need arises.
    13. Ensure all complaints, inquiries, suggestions by guests are attended to accordingly.
    14. Follow Carillon Miami Beach Sanitary Guidelines in order to maintain the highest possible rating from the Health Department on a regular basis.
    15. Follows corporate HACCP program as required. Responsible for HACCP related food temperature checks.
    16. Report, correct and document any observed or known safety hazards, conditions or unsafe practices and procedures. Report these infractions to management immediately and create a Hotsos as required.
    17. Communicate with the Engineering department as needed regarding smooth operation of equipment.
    18. Manage guest problems or complaints to according to Carillon Miami Beach guest problem resolution policy. Enlist the assistant of top management if required for a resolution.
    19. Perform other job-related duties as directed.

    Education, Experience and Skill Requirements

    1. Two or more years of experience as a Lead Chef, or kitchen management in the local market within a luxury hospitality setting preferred.
    2. Clear understanding of food costs and labor costs, able to assist in controlling costs as required.
    3. Ability to effectively handle multiple tasks simultaneously with frequent interruptions.
    4. Ability to handle stressful situations and be able to prevent and/or handle emergency situations.
    5. Ability to multitask: The junior sous chef in the position must be able to handle many tasks all at once.
    6. Ability to pay attention to detail: adherence to specific ingredients and measurement needed for various menus.
    7. Ability to develop and maintain good working relationships with all levels of Carillon Miami Beach staff, vendors, guests and government agencies.
    8. Good guest service skills.
    9. Good verbal and written communication skills in the English language.
    10. Strong organizational skills and attention to detail.
    11. Food sanitation certificate required
    12. Some working knowledge in Microsoft Word, Excel and Outlook.
    13. Strong analytical and problem-solving abilities.
    14. Good judgment and the ability to maintain confidentiality are critical.
    15. Availability to work any day, outlets, and/or schedule.
