    Fire Wings Oakland is a quick-service restaurant (QSR) specializing in bold, craveable chicken wings and sides. While part of a larger brand, our Oakland location is focused on building a strong, localized identity — not just another chain, but a community-focused business.

    Alongside Fire Wings, we operate Merritt House Cocktail Bar, a neighborhood gathering place overlooking Lake Merritt. Merritt House is a cozy, stylish cocktail bar with a food program designed to complement the bar experience. A new 10-item menu is being developed, and this role will lead in executing and refining it.

    Together, the two concepts share one large kitchen — and we're looking for a Kitchen Manager to lead the team, enforce systems, and oversee all food operations across both.

    The Role

    The Kitchen Manager is the operational backbone of our kitchen, responsible for leading staff, enforcing systems, and ensuring food quality and consistency across both concepts.

    • Fire Wings (majority of production): We average 15–20 tickets per hour, with peak rushes around 30. While not the extreme counts of a corporate QSR, Fire Wings orders are multi-component (different wing counts, sauces, and sides), which adds complexity and requires tight pacing and strong leadership. The menu is set by corporate, but you'll have room for tweaks and improvements. Our goal is to stand out as the most community-connected Fire Wings location.
    • Merritt House (smaller but equally important): The upcoming 10-item menu emphasizes precision and presentation. The Kitchen Manager will take the lead in executing and refining this menu, ensuring food meets high standards and enhances the identity of Merritt House as a true neighborhood bar and community living room.

    Key Responsibilities

    • Lead and manage all kitchen operations for both concepts.
    • Oversee pacing, ticket flow, and service times during peak hours.
    • Manage labor: scheduling, punctuality, shift coverage, and efficiency.
    • Control food costs through portioning, waste reduction, and accurate ordering.
    • Maintain a safe, clean, and compliant kitchen environment.
    • Enforce food safety, sanitation, and workplace safety standards.
    • Train, coach, and hold team members accountable.
    • Collaborate with ownership on systems, menu execution, and Merritt House development.
    • Attend weekly check-ins with ownership to review labor, costs, staffing, and performance.
    • Step in with FOH competence when needed — interacting with guests and supporting the front-of-house team.
    • Foster a positive, respectful, and team-oriented kitchen culture.

    Qualifications

    • Prior management experience in a QSR or fast-casual kitchen.
    • Strong leadership skills with the ability to motivate and hold staff accountable.
    • Competent in POS, scheduling, and ordering systems.
    • Solid interpersonal and communication skills with both staff and guests.
    • Calm under pressure and able to solve problems quickly.
    • Systems-focused mindset — thrives in structure and process.

    Compensation & Benefits

    • $25–$28 per hour, depending on experience.

    Other Considerations

    • Disciplinary oversight is expected, with shared ownership support during the interim.

    • Growth path is clear: over time, a General Manager will assume higher-level operations oversight, while you continue leading the kitchen.
