    The Lodge Food& Beverage Manager understands and leads the daily operationsof multiple F&B areas, ensuring guest satisfaction, staffengagement, safety and profitability initiatives are achievedwithin the lodge environment. The F&B Manager's keyresponsibilities include upholding brand standards in foodsafety/sanitation, cleanliness, staff scheduling &preparedness, training, inventory and guest service/presentation.The Food & Beverage Manager oversees multiple operationsincluding restaurants, bars, quick-serve outlets and banquets inconjunction with fellow F&BManagers.

    EssentialDaily Duties &Responsibilities:

    • Asassigned, oversees and takes ownership of the daily functions ofthe lodge restaurant and bar, quick service and daily functions ofthe lodge banquet operations per brand guidelines, completing alltasks necessary to achieve monthly KPI goals. Ensure all areas arestrategically prepared for timely, thorough and profitable guestservice interactions.
    • Assists F&Bleadership in achieving operational objectives by contributinginformation and recommendations to strategic plans and reviews;preparing and completing action plans; implementing production,productivity, quality, and customer service standards; resolvingproblems; completing audits; identifying trends; determining systemimprovements; implementing change.
    • Activelyparticipates and follows up in the proficient hiring, training,scheduling, coaching, and counseling, of Pack Members;communicating job expectations; planning, monitoring, givingfeedback, and reviewing job contributions; enforcing policies andprocedures consistent with the Great Wolf LodgeHandbook.
    • Ensures compliance of Pack Memberparticipation training courses in Great WolfUniversity.
    • Supports frontline staff inanticipating and attending to guests needs to ensure maximumsatisfaction.
    • Partners with other F&BLeaders with supervising the preparation, presentation andtimeliness of all foods and beverages in all venues of the Lodge;Ensure all items are prepared per recipe guidelines meeting flavor,quality, speed and service standards.
    • Assistsin each functional area during peak demand times as needed; toinclude all guest-facing roles in restaurants, bars, quick-serviceoutlets and banquets.
    • Partners with theCulinary and Purchasing Teams with storeroom, cooler and freezerorganization to maintain designated par levels and adherence to allhealth code requirements; First-in/First-outprotocols.
    • Assists Director and Chef withcontrolling cost of goods sold through regular review of portioncontrol and preparation quantities produced by frontline pack;Extends to activities designed to minimizewaste.
    • Ensures all F&B areas strictly andcontinuously adhere to all local and national standards of foodhandling, cleanliness, sanitation, organization and maintenancecoinciding with the daily/weekly/monthly cleaning schedule anddaily execution of Great Wolf internal safetyaudits.
    • Works with other F&B Leaders and HRto ensure timely and accurate execution of scheduling and payrollactivities.
    • Monitors equipment operation,perform preventative maintenance, troubleshoot breakdowns, maintainsupplies, and call for repairs as necessary through designatedchannels.
    • Participates in weekly/monthlyinventory procedures to ensure budgeted controllable costs are notexceeded and appropriate pars aremaintained.
    • Conducts department pre-shiftmeetings and service audits at designated timelines; course-correctservice components as needed to ensure guest satisfaction scoresand company standards are achieved.
    • Ensureslodge complies and meets all minimum score goals for scheduled andnon-scheduled safetyinspections.

    BasicQualifications &Skills:

    • High Schooldiploma or equivalent experience
    • Minimum of 1+years leadership experience in food & beverage, organizing ateam for optimal customer service
    • Must beflexible regarding scheduling based on business demands, includingnights, weekends and Holidays asneeded
    • Experienced in driving business,revenue, control cost, guest satisfaction and employeeengagement
    • Demonstrated experience leadingteams to achieve/exceed goals
    • Strong attentionto detail and time managementskills
    • Comprehensive knowledge of food andbeverage preparation, service standards, guest relations, andetiquette
    • Desktop and similar hospitalitysoftware (Familiarity with Microsoft Office Suite, payroll systems,POS)
    • Successful completion of criminalbackground check and drug screen
    • Highlyproficient with food safety and sanitation practices, rules andregulations

    DesiredQualifications &Traits:

    • Bachelor'sdegree in hospitality, business, or relatedfield
    • Preferably 2 years in a similarrole
    • Manager-level certification fromnationally accredited food safety trainingprogram
    • Manager-level certification fromnationally accredited alcohol awareness & safety trainingprogram
    • Effective communication and ability toresolve conflict; Proven teamwork
    • Trainingand/or experience with hands-on kitchen and bar equipmentmaintenance
    • Prior management experience inhotel/resort industry
    • Strong analytical skills– Understand and react appropriately to key businessindicators
    • Prior experience developing andimplementing plans to ensure a safe work environment in compliancewith appropriate regulations (i.e. – Ergonomics, EmergencyResponse, Injury and Illness Prevention, and Hazard CommunicationPlans)

    PhysicalRequirements:

    • Able tolift up to 30 lbs.
