JOB SUMMARY
Ability to cut meat to customer specifications with a high level of skill. Support the production team with a proper level of trimmed product ready for further processing.

Responsibilities

• Apt at recognizing deficiencies in raw materials
• Proficient in identifying products by proper name at sight and trimming loins accordingly
• Able to label/identify sub-primal cuts after trimming for the next steps in the processing
• Familiar with basic cuts and trimming necessary for preparing various types of meat (stew, roasts, etc.)
• May involve some heavy lifting

Physical Demands and Working Environment

• Engagement in heavy lifting tasks
• Need to use fingers and limbs to operate machinery and handle materials
• Ability to discern scents to detect freshness and spoilage
• Working conditions include refrigerated processing and warehouse areas that are cold, wet, with exposure to machinery and sharp surfaces
