**Essential Responsibilities**

Maintain working knowledge of state and local food regulations in a healthcare setting.

Menu development and execution.

Running the kitchen and ensuring quality service.

Ensuring sanitation conditions, and kitchen and food safety.

Scheduling and planning team meeting before service of meal.

Prep work and maintenance of quality standards.

Communicating clearly with residents, director, kitchen and service staff.

Be able to work in a standing position for long periods of time.

Prepare and assist in serving meals in accordance with the menu and recipes.

Provide proper plate-up and portion control.

Maintain and record proper temperature controls, food storage and food rotation.

Perform all side work and setup/breakdown duties as assigned.

Stock supplies; Set up workstations with all needed ingredients and cooking equipment.

Plan and direct kitchen activities.

Supervise wait staff to maintain quality and hygiene levels.

Ensure service runs smoothly.

Sourcing, ordering, costing and inventorying of all food, supplies, wares and equipment. Ensuring that quality and cost standards are consistently obtained. Let Director know when there are shortages.

Overseeing and assisting with food production tasks.

Prepare ingredients to use in cooking (chopping and peeling vegetables, cutting meat etc.).

Check food while cooking to stir or turn.

Ensure great presentation by dressing dishes before they are served.

Check quality of ingredients.

Attend and participate in workshops, seminars, in-service training programs, etc., as directed.

**Minimum Job Qualifications**

High School Diploma or Culinary Degree

ServSafe certification preferred.

**Level of Experience**

3-5 years of cooking experience preferred. Experience in fast-paced food environment required.

**General Knowledge/Skills/Abilities**

Must have the ability to follow written and oral instructions in English. Must be able to read and write English legibility. Must have knowledge of service standards and systems. Must be able to communicate clearly, professionally, concisely and respectfully. Possess the ability to inspire and mentor. Display a positive attitude.

**Technical Skills**

Must have professional kitchen experience, including working a hot line, grill and fryer.

**Work Contacts**

Primary contacts are with management, dietary staff and residents.

**Supervision**

This position has basic supervision of kitchen staff.

**Physical/Sensory**

Must meet the general health requirements set forth by the policies of this facility which include a medical and physical examination.

Must be able to push pull and lift up to 50 lbs.

Must be able to stand for long periods of time.
