    Main Purpose of Job

    Preparation and cooking of food according the Food Service Administrator/Manager or the DJS menus using standardized recipes and production sheets while adhering to food safety/sanitation requirements established by HACCP- based standard operating procedures. Maintenance of kitchen and work area in a clean and orderly manner. Train and lead Food Service workers, Youth Center Cooks IT and I. Monthly reports to the Food Service \\Administrator/Manager as required. As needed act as direct care staff and may be required to assist in staff support calls and watch youth as needed. This relates to the mission by providing safe, nutritious meals for youth housed at a residential program.\r

    POSITION DUTIES

    \r
    � Preparation\r
    of food requiring the use of both simple and complex standardized recipes for a\r
    quantity food service operation. Adherence to food safety/ sanitation practices\r
    according to HACCP-based standard operating procedures. Follow the Child\r
    Nutrition Program by practicing portion control and following provided menu.\r
    Use the proper weight and portions. Ready and available to work unscheduled\r
    times and overtime due to staff shortages and emergencies.\r

    � Delivery\r
    of prepared food to the food service line. Presentation and delivery of\r
    required dietary items at the point of service. Responsible for keeping a\r
    professional rapport with the youth/staff you are serving. Checks the tray line\r
    periodically to ensure the service line is supplied with food.�\r
    \r
    \r
    � Provide\r
    on-the-job training to youth that are selected to learn more about the food\r
    service department or other culinary aspects of the trade.�\r
    \r
    \r
    � Compile\r
    monthly food cost reports. Responsible for accurate perpetual inventories, as\r
    well as records.�\r
    \r
    \r
    � Maintain\r
    all records for cost purposed necessary for food reports. Determine food and\r
    cleaning supply quantities needed. Consult with Food Service\r
    Administrator/Manager to requisition items needed.\r
    \r
    \r

    MINIMUM QUALIFICATIONS

    Education:�Graduation from an accredited high school or possession of high school equivalency certificate acceptable to the Maryland State Board of Education as described in the Maryland Correctional Training Commission regulation.\r
    Experience: Two years of experience supervising youth in the preparation and serving of meals in a juvenile facility or juvenile services community program for at-risk youth.\r

    1. The above educational requirement is set by the Maryland Correctional Training Commission in accordance with the Correctional Services Article, Section 8-209, Annotated Code of Maryland.\r
    2. Candidates may substitute U.S. Armed Forces military service�experience as a non-commissioned officer in Food Services�classifications or Food Services specialty codes in the Equipment, Facilities and Services field of work on a year-for-year basis for �the required experience.\r

    of a ServSafe Certification.�\r

    \r
    � One year of experience in the Federal Child Nutrition Program.\r

    LICENSES, REGISTRATIONS AND CERTIFICATIONS

    1. Candidates must be fully certified by the Maryland Correctional Training Commission prior to appointment and are required to maintain certification while employed. \r
    2. Employees in this classification may be assigned duties which require the operation of a motor vehicle. Employees assigned such duties will be required to possess a motor vehicle operator's license valid in the State of Maryland. \r

    SPECIAL REQUIREMENTS

    1. In accordance with the Correctional Services Article,�Section 8-209�of the Annotated Code of Maryland,�the Maryland Correctional Training Commission shall establish the minimum qualifications for probationary or permanent appointment of a Department of Juvenile Services employee. These requirements are listed in detail in the Code of Maryland Regulations , general regulations of the Maryland Correctional Training Commission, and include:\r
    U.S. Citizenship or Resident Alien status\r
    Must be at least 21 years of age\r
    A thorough background check, including fingerprinting and drug testing\r
    An oral interview, and\r
    Physical and psychological examinations. \r
    2. Employees in this classification may be subject to call in and, therefore, may be required to provide the employing agency with a telephone number at which they can be reached. \r
    3. Employees in this classification are subject to substance abuse testing in accordance with Code of Maryland Regulation – Testing for Illegal Use of Drugs. \r
