About Laura Roy:
I am a dedicated nutrition educator and Certified Nutrition Specialist with over 12 years of teaching experience, including 1.5 years as an adjunct professor in higher education. My career has focused on bridging the gap between clinical nutrition practice and student-centered teaching, with expertise in simplifying complex concepts and empowering individuals to achieve optimal health.
In my clinical practice, I specialize in chronic disease management, motivational interviewing, and creating personalized strategies for lasting health behavior changes. As a former Science Department Chair, I’ve also developed leadership skills and a collaborative approach that enhances learning outcomes and fosters teamwork.
Currently pursuing a PhD in Nutrition and Diet Therapy, my research investigates the role of diet in inflammation related to metabolic syndrome. My passion for functional medicine, curriculum development, and inspiring others through education drives me to make meaningful contributions in academic and professional settings.

Experience
I am a Certified Nutrition Specialist and experienced educator with a proven track record in teaching, clinical practice, and curriculum development. With over 12 years in secondary education and nearly two years as an adjunct professor at the college level, I specialize in making complex scientific and nutritional concepts accessible to diverse learners.
In my private nutrition practice, I provide evidence-based medical nutrition therapy for a wide range of chronic conditions, including autoimmune diseases, metabolic disorders, and women’s health issues. I leverage my expertise in motivational interviewing and functional medicine to empower clients to make sustainable lifestyle changes.
Currently pursuing a PhD in Nutrition and Diet Therapy, my research focuses on the dietary drivers of inflammation in metabolic syndrome.
